Egg in a Hole Tray Bake

Notes:

I love an egg in a hole. I’ve eaten them the majority of my life, beginning the morning after my first campout at sleep away camp, which may have been when my whole life began (shout out to Heather Levine, my camp bestie, who reads this blog, and makes an excellent babka). My husband, knowing my fondness for eggs in a hole, very sweetly made these on my birthday: he researched recipes, and - for the very first time - prepared something in the kitchen exactly as I would’ve. Quite frankly, it was the sweetest thing he’s ever done. And so, for father's day, I’m sharing this recipe inspired by him: the sheet pan egg-in-a-hole bake. 

Once again, we’re reaching for our sheet pan. And, once again, this dish can be totally customized based on your family’s preferences. We used a hearty, seeded bread, but you could use a challah or brioche, a sourdough, or whatever you have on hand. Regular bacon could also be swapped for the turkey bacon that we used. You could also use a veggie or pork sausage, instead of chicken. We love a runny yolk, but cook the toasts until the eggs are done to your liking, or whisk the eggs before pouring over your toasts if you prefer scrambled eggs.

For a pop of color and fiber, we added some cherry tomatoes on the vine, which roast beautifully. We plated this with some avocado and hot sauce, and think you should, too.

Kid tips:

This whole dang recipe is kid-friendly, since there’s no knife work involved. Just help the kids crack the eggs to avoid a mess.

Ingredients: 

4 slices of thick-cut bread
4 large eggs
Olive oil spray
Salt and pepper
Everything bagel seasoning
~1 cup grated cheese of your choise
8 slices of turkey bacon
8 chicken or turkey breakfast sausage links
1 cup cherry tomatoes, preferably on the vine

Assembly:

Preheat the oven to 425°F and line a large sheet pan with parchment paper or foil for easy clean up, then lightly spray or grease your liner.

Place your bread slices on one half of a sheet pan, and use the lid of a spice jar to punch a hole in the center of each slice. Crack an egg into each bread hole, then season the eggs with a pinch of salt and pepper, and a sprinkle of everything bagel seasoning. Spread the grated cheese over your eggs.

Spread your bacon slices on the other half of your sheet pan, then place your sausage links around the border.

Finally, scatter your cherry tomatoes wherever they will fit on the pan.

Pop the sheet pan into your preheated oven, then bake for 8 for runny yolks, or 10 minutes for set yolks.

If you’d like your bacon or sausage a bit crispier, remove the eggs in a hole from the sheet pan when done, then return the rest of the pan to oven until the meat is done to your liking.
